Simple sauteed chicken


1/4 cup flour
salt and pepper, to taste
2 x 115g chicken breasts
3 tsp olive oil


Preheat oven to 190ºC.
In a bowl, put flour, and salt and pepper to taste.
Dredge chicken breasts in flour and pat, leaving a light coating.
In a pan, heat oil over medium-high heat.
Add chicken.
Saute, turning once, until golden, two to three minutes per side
Transfer to a baking sheet.
Roast until chicken is cooked through, seven to ten minutes.


This dish is best served with a nice fresh Greek salad, or rice.

Cooking tips:

Dredge: This means to coat your meat or poultry in flour or bread crumbs before cooking it, this helps to preserve the moisture during cooking. To make sure that the coating doesn’t turn pasty or gummy, shake off any excess flour before cooking.
