125 ml castor sugar
15 ml apricot jam
5 ml cinnamon
3 ml nutmeg
250 ml Flour
1 egg
5 ml baking powder
5 ml bicarbonate of soda
250 ml milk
3 ml salt

The Syrup
60 ml margarine
250 castor sugar
125 ml boiling water
125 ml Amarula liqueur
Pinch of Salt

Malva pudding served with cream:  Preheat the oven to 180°C.
Whisk together the sugar and the eggs until they are fluffy.
Add the jam, flour, nutmeg, cinnamon, baking powder and salt, stir in until blended.
Pour in the milk, sprinkle over the bicarb, and quickly whisk it altogether.
Pour the batter into a greased baking dish.
Cover with the lid and bake for about 40 minutes until golden brown.

The Syrup:
Melt the margarine in a saucepan then stir in all the other ingredients.
Do not allow to boil,   but gently heat through.
Pour this sauce over the pudding,  once it is removed from the oven.
Allow the sauce to soak through thoroughly.  Serve with whipped cream.
