Goat’s Cheese Quesadillas


4 Wholegrain Tortillas
4 tbsp goat’s cheese,crumbled
1 cup sauteed mushrooms or baby spinach leaves, red pepper flakes or Tabasco, to taste


1 Preheat a grill pan over a high heat, place a tortilla on a board; sprinkle half with one tablespoon cheese.
2 Top with some mushrooms or spinach leaves and season with red pepper or Tabasco. Fold over the half to cover.
3 Place in the grill pan and cook for a few minutes per side until browned on the outside and the cheese has melted. Repeat with the remaining tortillas, cut in half and serve.


This is a very fast and easy meal to make, especially after a long day at work and you are in a hurry to get food on the table. It tastes great and the family will love it. I used fresh peppers both red and green, this just adds an extra zing.
