375 ml cake flour
20 ml baking powder
15 ml sugar
335 ml milk
5 ml white vinegar
60 ml melted butter
Sunflower oil for frying
Honey and cinnamon, strawberries and cream to serve

Flapjacks without eggs:  Sift the dry ingredients together with 5 ml salt in a large bowl.
Mix the milk, vinegar and melted butter in a separate bowl.

In addition,  mix the wet and dry ingredients together until well combined.
Use immediately

Heat a thin layer of oil in a non-stick frying pan over a medium heat.
Drop spoonfuls of the mixture into the frying pan.

Flip when the bottom is golden brown. Cook the other side.
Remove from the heat and set aside to cool.

Top with a drizzle of honey and sprinkle with cinnamon.
Strawberries and cream make a good topping too.
