Ingredients:
600 g potatoes peeled and cut into quarter
300 g boneless salmon
2.5 ml Turmeric
Black pepper
500 ml fresh white breadcrumbs
10 ml Thai seasoning
65 ml flour
1 egg
30-45 ml oil

Method:
Fish cakes with lemon rice:  Place the salmon on an oven tray, sprinkle with Thai seasoning
and cover with tin foil. Cook in the oven at  180°C for 10 minutes.

Boil the potatoes until cooked and then mash them well.
Add the cooked salmon and herbs and spices to the mashed potatoes.

Chill the mixture for at least 1 hour. While chilled, shape into fish cakes.
Roll the fish cakes in the flour, then in the egg, and lastly in the breadcrumbs.

Heat the oil in a nonstick frying pan over a medium heat.
Cook the cakes until brown on both sides.
Serve with homemade relish and salad.
Homemade relish:
1 small cucumber cut into fine strips
6 cherry tomatoes halved
125 ml plain yoghurt
5 ml wasabi paste
5 ml paprika
Mix together and serve piled on fish cakes
Lemon rice side dish:
Melt some butter and heat some olive oil in a nonstick pan.
Add sliced onions and cook for 1 minute.
Stir in some garlic and lemon zest.
Continue to cook and stir for 30 seconds, or until fragrant.
Add cooked rice; season with turmeric, salt and pepper, and cook and stir further for 1 minute.
Stir in small amounts of vegetable broth, milk, and some lemon juice.
