Ingredients:
For the cherry sauce:
12 ounces frozen sweet cherries
1 cup water
1 cup sugar
1/2 teaspoon cinnamon

For the waffles:
2 cups all purpose flour
1/2 cup cocoa powder
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 cups milk
3 eggs
1/2 cup coconut oil, melted and cooled
1 teaspoon pure vanilla extract

Method:
Chocolate waffles with cherry sauce: For the sauce firstly:
Bring all of the ingredients to a boil in a medium saucepan.
Reduce the heat and simmer, uncovered, for 20 minutes.

Make the waffles:
First of all, heat a waffle iron and lightly coat it with non stick cooking spray.
In addition,  whisk the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.

Furthermore,  in a small bowl, whisk together the eggs, milk, coconut oil, and vanilla.
Finally, make a well in the centre of the dry ingredients and add the wet ingredients, mixing until just combined.

Cook the waffles until cooked through. Work in batches.
Hence,  put the cooked waffles on to a wire rack and keep them warm in a 200 degree oven until ready to serve.
Top with cherry syrup and powdered sugar, if desired.
